Creamy Zucchini Bake

This Creamy Zucchini Bake is the definition of comfort food. This is a good way to use up those zucchinis in your fridge. I love how simple, flavorful and creamy this dish is. My favorite way to enjoy this dish is with a piece of black bread and a spoonful of sour cream. Yuummmyyyyy!!!



Different ways to enjoy this dish:

  • by the spoonful

  • as gravy on mashed potatoes

  • with sour cream

  • with a slice of bread


Used in this Recipe:







Ingredients for this recipe:

  • 2 large Zucchini’s, pealed and cubed

  • 2 large Carrots, pealed and shredded

  • 1 Onion, diced

  • 1 1/2 tablespoons Vegetable or Olive Oil

  • 1 teaspoon Salt

  • 1 teaspoon Mrs. Dash

  • 2 1/2 tablespoons Ketchup or Tomato Sauce

  • 1 1/2 cups Heavy Whipping Cream



Instructions:

  1. Preheat oven to 375*F

  2. Place cubed zucchini into baking dish then set aside. In a large saucepan on medium-high heat combine 1 1/2 tablespoons vegetable or olive oil, shredded carrots, diced onion, 1 teaspoon Mrs. Dash, and 1 teaspoon salt. Sauté until golden. (constantly stir to not burn mixture)


3. Stir in 1 1/2 cups heavy whipping cream and 2 1/2 tablespoons ketchup or tomato sauce. Reduce to low heat and simmer for 3-5 minutes.



4. Remove from heat. Pour and spread mixture onto zucchini.



5. Cover baking dish with foil and bake for 35 minutes. Remove baking dish from oven, mix zucchini then place back into oven to 225*F for 40 minutes.
