Chicken Tomato Basil Soup

Delicious, rich in flavor and easy to make!

This is my all time favorite soup. For many of you, certain food may have some kind of memory.

For me, this dish brings back so many memories with my incredible cousins. All 5 off us girls, would get together have this soup with some cheesy grilled cheese and enjoy each others company. You don't have to be a huge tomato lover to enjoy this soup! I hope all of you enjoy this soup and make amazing memories!


  • 10-12 fresh tomatoes or 1 28oz can of diced tomatoes

  • 10 fresh basil leaves

  • 2 cups of heavy whipping cream

  • 5 medium garlic cloves

  • 2 tsp of salt

  • 1 tsp of cayenne pepper

  • 1 can of chicken breast (optional)

  • 1 cup of shredded Parmesan cheese


  1. In a medium saucepan bring the tomatoes and heavy whipping cream to a boil.

  2. Chop up your fresh basil and garlic and it toss into the soup

  3. Add your salt and pepper to taste

  4. With a smart stick hand blender, slowly blend the soup until smooth

  5. Add the chicken and Parmesan cheese

  6. Finally pour your soup into a bowl, sprinkle some Parmesan cheese, basil and optionally top it off with some croutons. You're all set to serve!!
