Best Ever Garlic Parmesan Fries

Who can resist French fries? Certainly not me! As summer approaches and the grill firing up, these deliciously seasoned fries make an ideal side dish. Seasoned with fresh garlic, rosemary, parsley, and Parmesan, this creates the perfect fry that will keep you coming back for more.







Ingredients

  • 5 medium potatoes

  • 6 tablespoons butter, melted

  • 1/2 cup grated Parmesan

  • 3 garlic cloves, minced

  • 2 tablespoons parsley, chopped

  • 1 tablespoon rosemary, chopped

  • 1 1/2 teaspoons salt (salt to taste)

  • Avocado oil (or your preferred oil) for frying




Instructions

  1. Cut fries into 1/4''- or 1/2'' thick slices.



  2. Place the fries into a large bowl and rinse under cold water washing away excess starch. Refill bowl with cold water and place a handful of ice over fries. Chill for 30 minutes. Once chilled, spread the fries on a paper towel to dry completely.



  3. Pour oil into pot and heat approximately to 300°F. Add the first batch of fries and cook them for about 5 to 7 minutes until they are halfway cooked, still pale and limp. Carefully scoop them out and place onto baking sheet. Continue this process until all batches are fried before proceeding to double fry them.


  4. For the double frying process, heat your oil to 350°F and cook fries once more. This time, leave them in the oil until they are golden and crispy.


  5. Place fries in a bowl with melted butter, Parmesan, garlic, parsley, and rosemary, then toss until evenly coated. Season with salt to taste.
