Oven-Roasted Corn On The Cob with Dill Butter




What's something that is considered a year long favorite in your house? Corn on the Cob is a big hit at our house. The minute it's on the table, it disappears in seconds! This simple recipe is perfect for someone who would much rather use an oven over a grill and still achieve delicious corn on the cob. It has such a juicy crunch and is topped with a creamy dill butter!




Ingredients

  • 7-8 Cobs of corn, peeled

  • 4 Tbsp unsalted butter, softened

  • 1/4 cup real mayo

  • 1/2 tsp salt

  • 1/4 tsp grounded pepper

  • 1 Tbsp fresh dill, finely chopped



Instructions


Step 1: Pre-heat oven to 400*

Step 2: If you haven’t already, husk the corn and pull off the silky threads.






Step 3: In a small bowl, cream together 4 Tbsp softened butter, 1/4 cup real Mayo, 1/2 tsp salt, 1/4 tsp pepper, and 1 Tbsp chopped dill.





Step 4: Generously spread the butter mixture over each corn cob.( I spread about 1 Tbsp on each)






Step 5: Wrap each corn cob with heavy duty foil ,(Mine was 12in long) making sure all sides are covered up.




Step 6: Place cobs into oven and roast for 40 minutes, turning them after 20 minutes.


Step 7: Carefully remove the corn from the oven and unwrap from the foil allowing to cool.


Step 8: Serve with butter on top and some salt & pepper as desired!
