This Broccoli and Grape Salad was an instant favorite. I picked up this recipe recently on a trip to Kentucky, while visiting family. My mom and my aunts are such amazing cooks, its always good to come back to a delicious home cooked meal. (I secretly always look forward to the food, is that weird or what?! ha-ha)
This salad is loaded with fresh cut broccoli, grated carrots, and grapes that add a great tang to it! It refrigerates very well overnight and is still very tasty the next day! I recently made this salad for a Sunday get together, and my father in-law fell in love with this salad! I hope you guys give this salad a try, this salad is a keeper!
Prep Time 15 Minutes
Ingredients
2 medium broccoli heads, chopped into bite-size pieces
2 large carrots, grated
2 cups purple/red grapes, cut in half
3 Tbsp real mayo
2 tsp squeezed lemon (optional)
Instructions
Chop 2 medium broccoli heads into bite-size pieces, chop grapes in half, and grade carrots.
In a medium size bowl add in all the cut ingredients.
Add 3 Tbsp of real mayo and mix until all mayo is well incorporated. If you would like to add more mayo, you can do so!
Add in 2 tsp squeezed lemon. (optional) I add lemon because it takes away a lot of the mayo taste and adds a sweet and comforting taste to the salad!
