Cheesy Chicken Fritters

These homemade chicken fritters are so easy and tasty. They are crispy on the outside and juicy on the inside. This recipe is also great for meal planning. If I know I'll be having a hectic week I make a huge batch and just pop them in the freezer, so that we can reheated them later on.

Most enjoyable with:

  • ranch

  • honey mustard

  • on some bread

  • with a side of mashed potatoes

Ingredients for this recipe:

  • 2 large Chicken Breasts, finely diced

  • 2 Eggs

  • 1/3 cup all-purpose Flour

  • 1/4 cup Ranch

  • 1/2 cup Mayo

  • 2 cups Mozzarella Cheese

  • 1/4 cup grated Parmesan Cheese

  • 1/4 cup freshly chopped Parsley

  • 1 teaspoon Salt

  • 1 teaspoon Pepper

  • 1 teaspoon Mrs. Dash

  • 1 teaspoon Paprika

  • 1/4 cup Vegetable Oil


  1. Dice chicken into 1/3in thick pieces then place into a large bowl.

  2. Add 2 eggs, 1/2 cup mayo, 1/4 cup ranch, and all seasonings into chicken, until well combined.

3. Gradually add in 1/3 cup all-purpose flour, 1/4 cup grated parmesan cheese, 2 cups mozzarella cheese, and 1/4 cup freshly chopped parsley.

4. Heat a large non-stick pan over medium heat and add 1/4 cup vegetable oil. Once oil is hot, scoop out a heaping tablespoon at a time onto pan. Lightly flatted top and fry 3-5 minutes on each side or until chicken is golden brown and fully cooked through. (inside should be all white) Repeat with remaining fritters and add more oil as needed.
