Running behind on lunch or dinner? It's ok, I got you ladies! This recipe is kid friendly (one of Matheus's favorite meals) and definitely my go to when I'm having a super hectic day! These bites are super fast to make and are sooo juicy and full of flavor. You can even prepare them the night before and plop them in the fridge.
Different ways to enjoy Parmesan Chicken Bites:
Ranch, ketchup, bbq, 0r hot sauce (chicken nugget style)
Rice, angel hair pasta, or potatoes
On any green salad
Ingredients for this recipe:
1 lb Chicken Tenders
3/4 cup Mayo
3/4 cup Grated Parmesan Cheese
1/4 cup fresh Parsley
1/2 tsp Salt
1/4 tsp Pepper
1 tsp Mrs. Dash
1 tsp Paprika
1 tsp Garlic Powder
1 tsp Olive Oil or Vegetable Oil
1/3 cup Shredded Parmesan Cheese (for topping, optional)
Preheat oven to 350*F. Line baking sheet with parchment paper.
Cube 1 lb Chicken Tenders and season with 1/2 tsp Salt, 1/4 tsp Pepper, 1 tsp Mrs. Dash, 1 tsp Paprika, and 1 tsp Garlic Powder. Set aside.
3. In a mixing bowl combine 3/4 cup Mayo, 3/4 cup Grated Parmesan Cheese, and 1/4 cup chopped Parsley until smooth. Add in seasoned chicken bites and lightly fold until all chicken is covered in mayo mixture.
4. Evenly spread 1 tsp Olive Oil or Vegetable Oil on parchment paper. Place bites onto baking sheet and sprinkle 1/3 cup Shredded Parmesan Cheese. Bake for 25-30 minutes or until golden brown and sizzling.
