Breakfast Potatoes

Easy, Simple, and Delightful. These three words describe why I love these potatoes so much! Crunchy on the outside and mushy on the inside!

Prep time: 10 minutes Cook time: 35 minutes


  • 16 baby potatoes or 8 large potatoes

  • 1/4 cup of olive oil

  • 1 tsp of salt

  • 1/4 tsp of pepper

  • 1 tsp of Mrs. Dash

  • 1 tsp of paprika

  • 1 tsp of dry basil

  • 1 tsp of dry parsley

  • Fresh dill, for topping (optional)


  1. Pre-heat oven to 400*F

  2. Wash and quarter cube the potatoes. ( pealing is optional.)

  3. Spread the potatoes onto your baking pan.

  4. Add the remaining ingredients (except dill) to the potatoes.

  5. Mix the potatoes to incorporate all ingredients.

  6. Bake the potatoes for 25-35 minutes.

  7. Sprinkle some fresh dill before serving. (optional)
