Strawberry Kiwi Shortcake

This simple vanilla cake topped with fresh whipped cream and loads of berries, it's the perfect way to enjoy a cup of tea/coffee. Its super light and delicious, and bursting with tangy flavors from the berries. This recipe just brings back memories of my mom and I in the kitchen together making this cake.


Used in this recipe:




Ingredients for Cake:

  • 6 Large Eggs (room temperature)

  • 1 cup Granulated Sugar

  • 1 cup All-Purpose Flour

  • 1 teaspoon Baking Powder

Ingredients for Frosting:

  • 8 oz Cream Cheese (softened at room temperature)

  • 1 cup Granulated Sugar

  • 1 teaspoon Vanilla Extract

  • 1/3 cup Heavy Whipping Cream (cold)

  • 2 Tablespoons Powdered Sugar

  • 1 tub Cool Whip (softened at room temperature)

For Topping/Filling:

  • 1 cup Strawberries

  • 1 cup Kiwi

  • 1/2 cup warm water (soaking cake)

  • 1 teaspoon vanilla extract or syrup (soaking cake)



Instructions for cake:

  1. Butter and line two 9” Cake pans with parchment paper. Preheat oven to 350*F


2. In an electric mixer using the paddle attachment combine 6 eggs, 1 cup granulated sugar, and 1 tsp baking powder. Mix on high for 10-15 minutes or until fluffy and tripled in volume. Sift in 1 cup all-purpose flour in thirds. Using a rubber spatula gently fold mixture. (Don’t over-mix.)



3. Evenly pour dough onto buttered cake pans. Bake for 20-25 minutes or until top is golden brown. Cool completely.



Frosting

  1. Beat 8 oz softened cream cheese and 1 cup granulated sugar until smooth. Add in 1 tsp vanilla extract, beat for another minute.

  2. Add in 1/3 cup cold heavy whipping, 2 Tbsp powdered sugar, and 1 tub Cool Whip. Beat until nice and fluffy.



Cake assembly

  1. Slice strawberries and kiwis.

  2. Combine 1/2 cup warm water and 1 tsp vanilla extract or syrup. Set aside.



3. Place first cake layer onto cake stand. Using a large spoon soak cake with vanilla mixture. Generously spread frosting and cover with strawberries and kiwis.



4. Repeat for top layer. If desired frost sides of the cake as well, I kept it simple.
