This dessert is a romantic dish. I always picture a canal light dinner, in France with my husband. (I think these types of things only happen in movies.. Ha-Ha Oh well..) This Crème brûlée is filled with a creamy rich custard base, topped with a contrasting layer of caramelized sugar. My sister in-law actually introduced me to this recipe! I was surprised by how fast and easy this dish actually was. Its the perfect dish for a get together.
Prep Time: 20 minutes Cook time: 40 minutes
Ingredients
2 cups heavy whipping cream
2 cups half & half
3 tsp vanilla extract
1/4 tsp salt
10 egg yolks
1 cup sugar, more for topping
Instructions
Pre-Heat oven to 325*F
In a saucepan combine 2 cups heavy whipping cream, 2 cups half & half, 3 tsp vanilla extract, and 1/4 tsp salt. Cook over low heat until hot. (do not bring to a boil.) Set saucepan aside.
In a medium size bowl, whisk together 10 egg yolks and 1 cup sugar until smooth.
Pour the creme mixture into the egg mixture and whisk together.
Pour mixture into 8 ramekins and place into a deep baking dish. Fill dish with boiling water halfway up the sides of the ramekins.
Bake for 30-40 minutes or until centers are barely set.
When ready to serve, top each Crème brûlée evenly with 2 tsp sugar. Torch the top by moving slowly as you work your way around the whole surface. Once Crème brûlée is light brown, set aside and allow the sugar crystallize for a few minutes, then dig in!
